Are you looking to push the envelope or just get the biggest that fits with no issues?
I have 285/75 16 too. This gives a lot of sidewall height. It is pretty commonly used on SMBs.
You can also get 285/70 17, which will give you more clearance to front brake calipers in case rocks get in there, but less sidewall height.
I have Bushwacker fender flares, and these tires come pretty close to the rear edge of the front flares. Without more lift or clearance I could imagine rubbing issues on a Quigley.
