Gotta say, that's a hell of a lot more than I would ever consider tackling...even if i had your experience.
If you decide to pursue this endeavor, and if everything goes off without issue, you certainly warrant a whole lot of high-5's and I'd gladly bring my rig to you for work (just to help fill some of that free time you have). Really - wish you the best if you go forward with your project.

You should have few to almost no issues with this project then----you're good to go!

I would add or perhaps repeat obtaining the appropriate year Ford pubished EVTM's for both vans you'll be using. Certainly swapping out entire wiring harnesses and devices is the "easier" route having schematics as reference can't hurt progress.
