Just to add another data point, my wife and I can stand up inside our Opt Overland pop top and have just a bit of clearance to the finished ceiling. We're both 5'6", and the floor isn't finished yet. I can take measurements if you'd like. Our is an EB; the RB mold is similar but different. We've used a couple of their rental vans and were able to stand up in those as well from memory.

I would look at DIY fiberglass boat kits. I helped a friend build a sail boat. It came out very nice. The techniques could be easily used to build any shape or size top. We fiberglass ed in wood strips for anchor points and reinforced critical areas with carbon fiber. His boat was very smooth and beautiful. The cool thing is that it you wanted to add or take out features over time you could do that. After all, I'm sure fiberline started in a garage or small shop.
