Black bean and rice:

One bag boil in a bag rice
One can of black beans (drained)
One can diced Itialian tomatoes (with the liquid)
4-5 sliced hot dogs

In a jet boil:

1. Boil rice a hot dogs, put in large Ziplok storage container.

2. Discard water and heat up tomatoes and beans.

3. Mix and enjoy! Serves 2-4 depending on how hungry.

Hi. We enjoy cooking both at home and on the road. We carry a two burner camp stove, a Coleman (works on top of the stove) and a charcoal b-b-q and do almost all our meal prep and cooking outside. Below is the menu for a recent 5 week road trip in eastern Arizona, Utah and Nevada.

Breakfast

Granola w/ fresh milk
Pancakes served with raspberry jam (use corn muffin mix)
Oatmeal (Not Instant)
Fresh baked cornbread or biscuits (I bring an oven)
Coffee, tea, fruit juice, fruit, hot chocolate

Lunch

Trail mix
Trail/breakfast bars
Crackers, cheese, smoked oysters, sardines, salami
Tabuli
Yogurt
Fruit (apples, oranges and grapefruit travel well. Also raisins, dried cranberries, dates, figs, prunes, apples and apricots)

Dinner

B-b-q salmon, sour dough bread and salad. (Bread and salad stuff lasts about 3 days) This is traditional 1st nite.

B-b-q steak, chicken, pork chops and sausage in no particular order
Pasta w/ bottled red sauce
Packaged Indian spinach curry
Cowboy paella (rice, red beans, jalapeno, sun dried tomatoes, chicken thighs, chorizo, pepperoni, canned clams, roasted red peppers)
Smoked salmon pasta (or w/ wild mushrooms) Neither of these require fresh ingredients
Vegetable curry - Assumes we find fresh veggies in sufficient variety along the way
Pasta Carbonara
Pizza on Pita Bread- pizza sauce, sautéed onions/bell peppers, olives, pepperoni, cheese and cook in the oven.
Pasta w/ Goat Cheese, Jalapenos and Green Beans-depends on finding decent gr. beans
Falafels-bring mix from home, serve in pita or tortillas w/ tomatoes, lettuce etc.


Dessert

Chocolate Orange Ball
Rice Pudding
Up-side-down cake (baked in camp)
Pop corn

We started a few years ago to take Dutch Ovens (12" and 8") with us. Prior to that we were limited to what you could cook on a Coleman stove.

Once and awhile we now cook a breakfast casserole (eggs, cheese, bread, sausage, etc).

For dinners: meat loaf, whole chickens, bread, rolls, cakes, pies,etc. What ever you can cook in a normal oven can be cooked in a Dutch Oven.

Adds variety over the our normal Coleman cooking.

We carry a Coleman 5010D700T Camp Oven, available at several retailers for around $30. Fits on top of the two burner propane stove. The oven allows us to cook biscuits, muffins, corn bread, pizza and our "upside down" cake. The oven folds down to a small size (12"x12"x5" (approx)) and fits neatly in the bottom of the Aluminess Baja Box. Adds a lot of versatility to the menu.

Popcorn is JiffyPop cooked on the stove. Great when weather drives us inside for a movie on the laptop.

Chicken Dumplings
6 boneless skinless chicken thighs
2 cups frozen peas and carrots
1 cup water
1 oz envelope chicken gravy mix
¼ teaspoon season salt
2 cups Bisquick or Biscuit mix
¾ cup

Prepare Dumplings:
In a bowl mix Bisquick and milk with a spoon (about 20 strokes or until blended)

Rinse chicken and place towards the center of a non-stick 12” pan and sprinkle with season salt. Then surround with frozen veggies. Add gravy mix and water. Drop spoonfuls of dumpling batter over top. (About 12-15 dumplings)

On Coleman type stove, adjust flame to a very low setting.
Cover and cook 40 to 45 minutes or until done. Don’t look until 40 minutes if lid is not transparent. Gravy will be bubbling and dumplings will be fluffy and slightly firm to the touch. Air temp, stove type, and altitude may affect cooking times.

Variations include:
Preparing a 2nd package of gravy mix on the side and pouring over dumplings after main dish is cooked.
Frozen green beans, peas with pearl onions, and sliced carrots also work well with the dish.

Cake.
½ package (approx 2 cups) any popular brand Chocolate cake mix. (other flavors work as well)
1 egg.
3 tablespoons vegetable oil.
2/3 cup water.

Spray a 10” nonstick skillet with Pam or similar product (or grease with shortening).
Place ingredients into mixing bowl and mix for 2 min. Pour into skillet, COVER with lid and cook for 30 to 35 minutes using the lowest setting possible. Don’t lift lid until 30 min have passed. The cake is done when the center springs back when touched. Remove from heat, uncover and let stand for 10 min.
Air temp, stove type, and altitude may affect cooking times. The Skillet needs to be in good shape.

These recipes (from the no mystery cooking guide) are made to be cooked on electric or natural gas stoves. On electric stoves the heat setting should be set to between low and medium. On a gas stove the setting should be on low that produces a ¼ inch flame. Coleman type stoves produce different heat settings than natural gas stoves. A ¼ inch flame on a Coleman stove is way too hot so you might have to experiment a bit before cooking in the wild. Try to keep the flame uniform but as low as possible on a Coleman stove. Practice makes perfect. Also the size of the burner comes into play. There are times when I place foil around the skillet to keep the heat as even as possible toward the outer edges of the pan. I also cover the bottom of the stove to prepare for boil over which helps in cleanup.

To pop corn: (before microwaves and jiffy pop)

Cover bottom of kettle with popcorn and oil. Place over gas flame. Shake till the popcorn stops popping.
