Herb,
I think you are right, previous converted vehicles that I have driven & owned, have had convex mirrors, but the angles of pivot have to be changed for the driver, now sitting right not left.
Does that make sense?

The extendable tow mirrors at least are symmetric. At least as far as I can tell.

Finally after 3 years on this project picked up Ford 4x4 SMB from Customs Broker Wharehouse. A few things not working, but haven't checked all the fuses. Started 1st go.
Now to get vehicle licensed. Not straight forward, everything has to be inspected and comply with stringent Australian Design Rules, which with Right Hand Drive Conversion, many of these items were done as well. Drives well!
