Hey Rob, Yeah I think if I had an aluminess bumper and box I would have deleted the LP box for more storage. If you where to get a 1/8" thick aluminum piece and trace the LP box on to it and cut it, paint or powder coat it. You would have a perfect LP box delete plate. The plastic LP box has a thin rubber gasket that you can reuse. Or get some 3M Scotch extreme mounting tape to take the place of the gasket.
I don't know if you have a SMB build but taking that door panel off is a snap. 7 drywall screws and a tug.

So here is what I ended up doing for a latch. It would have been harder for me to barrow a sewing machine that could handle that vinyl. So I went with this.
The aluminum piece is a spacer I made to compensate of the foam under the vinyl.
Above, it is in the closed/locked position. Below, unlocked and opening.
