Damn both of you. I had to get out of my hot tub at a balmy 101F to come inside to read this post.

I asked this question to SMB some time ago. The 16-gal for a "50" is one tank and fits in the 10-gal spot under the couch, but they modify the metal frame so the extra gallons stick out the back in a visible way (if you have the bed platform out of the back. Doesn't stick out too much, though.
If you want 20 gal, they put an extra 10-gal tank along the right rear side of the van. encased so you don't see it. But it eliminates putting other options in the same location.
They sent me a diagram showing both options, but I can't find the diagram.

After taking some more measurements I think I'm back to adding another 10 gal. tank to the right of the existing "10" gal. tank. I could squeeze a new 14.5 gal tank in where my existing "10" gal. tank is, but with a family of four expecting to have some extended times away from fresh water this summer I think 20ish gallons makes sense. I'll configure it so I can remove the additional tank if needed, but I suspect that once it is in I will leave it in.

Hmm, why not add the 14.5 gal tank, and move your 10 gal to the right as the temp? Then you get ~25 for the trip, and an improved 15 after the trip. You gotta buy one tank... so why not make it the 14.5 instead of the 10?

Contact El Monte Plastics at (626) 442 - 0162 and request a catalog . I would personally upgrade the existing tank to a larger size as opposed to a dual configuration as this will lead to twice the chance of leaking .
PS they are on Strozier Ave , El Monte Ca. The bulk of their business is for the RV industry and I have used them with success for 25 plus years

The other problem with just replacing my original tank is that I would lose a few inches to the storage under the bed to the rear of the van. Not sure yet if that is a big issue or not. I know there are several times I have that area packed to the point it is a challenge to get the rear doors closed. A single tank solution would be the cleanest. I would still like to see photos of a 16 or 20 gal installation in a "50" layout. Would be curious if all the extra tank size sticks out the rear of the couch in addition to filling all of the space between the couch steel supports.
I hope to get my plan together this weekend.

Another good source for plastic tanks is West Marine. They will also have all of the plumbing items needed for a retrofit. Do you have one near you?
