Just make sure any flexible panels will NOT flex in the wind. The constant flexing of solar panels will quickly cause the connections between individual cells to deteriorate and eventually fail. Make sure they are rigid in the high headwinds they will see.

Yes, just to be clear, I wasn’t intending to recommend the flexible panels from Renogy. Here’s the compact design I was thinking of, seems to be a bit longer and a bit narrower

These are the panels I got, the high efficiency version, a bit shorter.

With any panel, you can run aluminum angle the span between and into the tracks and attach the panel to that, just maybe get the 1/4” stuff for rigidity. That way, you can run any sized panel you want.
