I use a 100 W panel, but it's portable. Fits in the van, and I can move it about 20' out from the van. So I can park in shade but have panel in the daylight, or even leave it at home (I the winter my fridge, which pulls 3.2A, doesn't need as much juice obviously).

Thanks everyone for chiming in here, and I have learned a lot along the way.
We have decided to get a simple solar starter kit, just to fill our needs for now and take more time to research a more serious set-up once the piggy bank has recovered from all the other "projects" the Mothership has received since we got her - almost exactly a year ago!
The hubby installed it (I am not technically gifted), and we have been running a portable swamp cooler plus the fridge all day yesterday without any loss of power in the house battery. Guess that's good news
