What's the difference between camping propane stoves (such as a Coleman two-burner), and built-in stovetops (such as SMB provides), that makes it safe to use the latter inside the van?
In a ventilated space, such as a van with top up and PH windows opened, is it ok to use a camping stove for things like boiling water? My natural reaction would be 'no way!' but I'm often guilty of being over-cautious.
I use my Butane stove inside all the time. Propane is the same. Keep a couple of windows cracked for some cross ventilation. Asphyxiation is the worst danger I believe followed by an explosive atmosphere if a leak occurs when using/storing a tank inside. Water vapor might be a consideration but boiling water would be worse. When I was a kid my dad always kept a propane lantern on low to keep the chill off. I too am cautious. I don't like to keep those cheap tanks in the van But I do ....just don't tell anybody. Specific gravity of these fuels is heavier than air and can pool at normal temps but will dissipate over time.

But if SMB installs a stove, they also install a CO2, smoke detector and propane detector.
If they don't install a propane stove they don't include the propane detector not sure about the other two.
I would make sure you have all three dectectors if you are going to store propane and/or cook in the van. You can get a propane detector at an RV store.
There are about a bizillion cabover campers out there that use propane to cook with, just keep a window slightly cracked. This goes without saying but I will say it anyway don't go to sleep with the stove on Daaaaaaa.
