Every U-haul has a center seat. They even sell them new.

I wouldn't worry much about the seat, as long as you anchor the belt correctly. FVMSS requires 5,000 pounds/anchor for a lap belt, or 3,000 pounds/anchor for a 3-point belt.

FWIW, my van has a center isle seating package, so some of the seat anchors are not stock. Those locations have a 3" square x 1/4" backing plate and the center seats are lap belts attached to the seat frame.

I hav seen some vans that have been in very serious crashes. The engine did not intrude inside in any of them.

Yep, I believe the engine is designed to drop down and back in a severe crash, at least not ending up in someone's lap.
