If I were starting over, and of course knowing what I know now about how we'll use the SMB, I would have gotten the transformer interior setup instead of the EB-51 layout.

Having a fridge readily available is extremely useful. But the built in storage and rear bed/seat layout, sink, microwave has not been a good fit with our needs. More interior cargo room for hauling stuff is what I need most often.

The one luxury item I'd try to work into the mix is a suburban heater. We don't use it often, but when it is used it is very much appreciated.

I have a bit of a "transformer plan going, mu only permanent fixture is the stove top/furnace. It has one drawer between the 2 that houses my cooking stuff, the rest is open!

minimalist interiors?

Ditto that. I have a webasto heater behind the driver seat and a removable platform for double decker sleeping/gear hauling that uses the rear sofa brackets to hold it. So far it has worked great and can switch back to a passenger rig in under 5 minutes. I live the dual life in mine. I replaced a suburban for the biodiesel 4x4 monster van. Couldn't be happier.
