Weird gauge problem

I have a 1995 e350 with a 5.8 w/160k. When I turn on the ac the oil and temp gauges jump up instantly. If i turn ac off they drop back instantly also. The temp goes from about the m in normal to the L. Oil is a similar jump. Volts go down at the same time which seems normal, not a big drop. Does not seem to be overheating. Anybody got any ideas? Im turning the ac off on occasion to keep the temp gauge down for my peace of mind but it's getting uncomfortable.
