Have been getting great advice. I am now thinking along the lines of having a side door cabinet which we could take out when not needed. The cabinet (attached sketch) would have a sink, hand pump and 5 ea. 2 gallon Rotopax water jugs. One of the jugs would be designated for grey water.

My van is pretty minimal, but I did put in a tank and a pump with a very simple spigot. I have contemplated, but have not put in a sink with a drain.

IMO it's a huge convenience while camping. I've spent many years with lots of jugs, both disposable and not, and they are a pain to change out and can fall over, get damaged, or otherwise end up leaking. Between two people, I feel like it saves half an hour a day while out on the road or camped.

I put the tank under the van, so I do dump it in winter. I'll be re-sanitizing it for the first time since the initial sanitizing this spring, but it's really only about an hour of actual work, and something you'd mostly be doing with re-usable containers as well.

and for similar reasons. I want to keep the RB interior space flexible, we cook exclusively outside (even in the winter) and for the most part 5 gal jug of water has been plenty for us. The one thing that my wife does always want to have though (and I can’t argue) is a way to give the little ones (1 and 4y/o) a bath/shower. So we recently bought a waterport from costco that we plan to probably put on the front aluminess hitch or on our rock sliders. I’m not sure if it will really heat water (it is black, but they intentionally undersell the solar properties of it I think), but we use a jet boil to heat water and I think maybe we can just add a bit of boiling water to the ambient water in the tank to give it warm’ish water when needed. Winter bathing just won’t happen though. But as a bonus we can use the pressurized water for washing dishes too. Will probably still carry a 5gal jug inside the van. We will see how it works, really hoping it’s something we are happy with. I like the external storage and the fact it’s pressurized.
