I just added a leaf to our EB build, as it was sitting more on the factory overloads than I wanted. Ended up using a SuperLift 2570 A-A-L that got me over 3 inches in the rear and improved the ride...

Leaving you time to do XCase and driveshafts, fuel tank etc...
I wouldn't bother with a camburg or action van kit...

We too live in CO, with similar requirements. Except I tow our boat so a sprinter was out do due the towing capacity. So I found a one owner v10 out of California.
We both have daily drivers, so...

I went with 100W on the roof as well. Given your intended usage I could see it benefitting your battery health, even it in only keeps up with your draw.

As suggested, drill them out. Don't use too much pressure on the drill, because once you are through you may dent the outside of your van. Don't ask how I know.
