Also, for the black water tank, I've seen campervans with a portable cassette directly under the toilet, is that a good option? can you hook up the camping pipes when you have a cassette or do you always have to empty it manually?

It is a good diagram, but it is for a 'complete' RV plumbing system, which very few camper vans have in my experience. Do you really need a black tank, for instance? It's a lot of weight and space. As far as a cassette, the only kind I have seen (and had) are the types where the cassette is the black tank. It is separate from any other part of the plumbing system. The problem with them and camper vans is that you usually have to cut a hole in the side of the vehicle, but I think you solved that by putting it inside your 60/40 door. Just something to consider, a lot of camper van builds just use a simple porta-potty. They are not gross, don't smell, and hold quite a lot of fresh and black water. Plus, they are totally removable in the winter time so there's nothing to winterize. I guess a cassette is too, basically, but porta pottys are pretty simple and cheap. If you don't need it, leave it at home and free up the space.
I had a cassette toilet in a pop-up or two years ago. I do like the idea but I bet from a cost perspective a porta potty would easily win out.
Anyway, back on topic, the diagram is a great but probably a little more complex than you may need, and it lacks some one way valves that you will need.
