So it looks like we could possibly hit Sequoia National Park, Death Valley (just to tag a low point. Heat wouldn't agree with the dogs), Zion, and the north side of the Grand Canyon.

Anyone care to make any recommendations in these areas especially for the Grand Canyon?

Thanks!

Lactic, I forgot you had dogs. That'll make time out of the van in the National Parks more difficult. I would look for camping west and south of Yosemite just off Highway 41 at Bass Lake in the Sierra National Forest. It's on the way to Fresno and will give your dogs more freedom. Ditto the Ansel Adams Wilderness from 395 at Mammoth, but I don't know whether you'll be that south on the eastern Sierra.
Take pictures!

From St George, Utah to Fresno, the shortest way is via Las Vegas...Yahoo says that is an 8 hour drive. Unfortunately, there just isn't any camping close to Fresno. You could go to Sequoia NP on Monday and leave very early Tuesday to get to SMB.

From there, you could head to Yosemite via Highway 41 and hopefully find a campsite as Joanna suggests. After checking out the Valley, head up to Tuolumne Meadows and Tioga Pass to cross the Sierras. Go south on 395...there are lots and lots of places to boondock along this highway. If you every watched old westerns from the 50s, there is an interesting area just west of Lone Pine where many of these movies were shot. From 395, you can go through Death Valley and head toward the Grand Canyon. We haven't done it, but I've heard good reports about camping at Toroweap on the north rim of the canyon.

There is a Camping World/Dealer right near Fresno. Park on the street/alley outside any gates. There are some large marked spots- there is security for the lots and it's quiet and shady.
