Think about killing the bathroom, incorporate a portapotti, and allow the rest to expand....Gives you more room to play with elsewhere, significantly simplifies the build $ and room in a small space...
Your stated goal is to be out in the "woods" which allows living outside.

Agree on the bathroom, but I'm married. The bathroom's a hard requirement.

Heavy AGM batteries should not be elevated, but as low as possible for lower COG.
