Replacing Suburban water heater with fresh water tank

Anyone here with a Ford EB/RB 50 layout replace their water heater with a fresh water tank? Would be curious to learn about what you did before I dive into the project. I simply do not use the water heater and would prefer adding another 10 gallons of fresh water (or whatever will fit).

That should be a fairly easy project. You'll want to remove the front flange and door off the old hwh, probably the hardest part. The plumbing shouldn't be difficult at all unless it's hard to reach.
