Im on a similar track, and just wanted to tag on this thread. I just bought a e350 4x4 cargo and plan to turn it into a homemade sportsmobile, less some things I just dont need.

I guess I should share my plans too.
Solar w/ at least 3 batts for power
sink,stove, shallow counter
Penthouse top
some sort of shore power(dont have a clue on this one yet)
wicked secure "hidden" compartment for electronics
computer mount
upgraded stero
major insulation
