SMB EB154S Build Recommendations

Hi, first time posting - Put down our deposit last Jan for a Jan 2017 build. Planning to full-time/boondock for a couple of years starting next summer. We've decided on the EB 154S with a lot of mods. Plan is to have 2 fans and pre-wire for AC in case we change our mind, 30 gallons of water, will have a Nature's Head composting toilet installed so no black water tank and want to have two 160 solar panels installed if they'll fit. We've never owned any kind of RV before so I'm looking for any recommendations.

I don't have any experience with a center aisle layout, but here are my comments FWIW:

- Window in shower area seems sorta useless, plus may be hard to keep water from seeping into wall around window, and to keep window clean (if the shower is used)
- Window behind kitchen counter could get greasy and splattered from food prep and cooking.
- The flip-up counter that blocks the side door... will block the side door. We find we are going in and out of the van a lot, all the time.
- 25" wide doorway seems too narrow. During camping, we carry stuff in and out of the van all the time, and it is hard to turn sideways while climbing in and out. Also we sometimes carry large objects in the van when not camping.
