We do a lot of river trips and waste management there has much in common with the same issue in SMB camping. Typically for us it comes down to some form of Wag Bag system, I'm not really brand loyal but I have found the best deals in bulk (a dozen or more) of the military surplus type. If you're with a crowd each bag can typically hold 5 uses. (YMMV) When we were younger we just spread it on the ground and squatted but now we carry one of two seat systems in our Trasharoo.

But the toilet seat, when combined with a gamma seal lid on a 5 gallon bucket, can double as both the throne and secure storage of the sealed Wag Bags:
As an aside, for those who hate to make the trek outside to pee in the middle of the night, a wide mouth water bottle makes an excellent pee bottle. I've dedicated an old one for that purpose, yellow color for obvious reasons. My wife prefers containers that the mixed nuts come in at Costco or Sams. They have a very wide opening that works for her.
