pressure cookers are awesome!

We used to live on a sailboat, and couldn't do without our pressure cooker. Now we live at 6600 feet and - couldn't do without our pressure cooker. Saves on cooking fuel, you bet.

Ours is kinda big for the van, though. We have yet to do a trip (first one will be a long weekend in Utah this weekend) and we will do what we used to do when we had a Westfalia - have lots of semi-instant and pre-cooked stuff (like tortillas and instant/canned refried beans plus salsa and salad, those gourmet smoked sausages, and so on)

cookers

I use a small electric rice cooker, Oster electric egg cooker, and an electric skillet for boiling potatoes, pasta, chicken spag, gumbo, bacon, eggs, etc. We have a invertor so I can plug in all the time, if it runs low, crank up the engine.

Uses small amount of wood, burns hot and relatively cleanly. Little pricy, but his craftsmanship is supposed to be first rate.

This thing takes up space but is quite handy during short trips.

I take vegetables in boil bags and anything in food saver bags that just needs to be warmed up (hot wings, rice, tamales...etc). Very handy at pre cooking for hot food around the campfire or cooking stuff in the morning for a fast hot lunch.

Like the wood stove, coal could be left burning for long periods of time and served the dual purpose of cooking and keeping a room warm.
