Added benefit of Gaucho on Driver side is the views out of the side doors plus the interaction with the 180 deg swiveled Passenger seat. re Cabinets and Doors - Running a cabinet on the passenger side about 1/3rd way into the smaller 40 door is actually a very efficient use of space.

Over 6' tall really makes the van build designs a challenge. I tried to do bench seat along the wall at first and then realized very quickly what everyone here has said. Its just not comfortable unless you make it way wider at the base and then there is no room left to walk.

You could look also into Flarespace. They now offer Econoline flares. Then you could sleep east-west across the back and build part of it as a Murphy bed/workspace like Winnebago does is the Solis (I think).
