I did a 80/20 Bed platform and really like the ease of building and reconfiguring when I get my tracks in floor I will do 80/20 for everything i'm useless with wood but I can build an erector set
I think it’s a good option to leave the existing factory Ford panels in place for the ability to quickly transform it. I did that same thing with my interior and it is basically an RB 50 floor plan, but I can easily Pull out the cabinets or the seat/bed. Gives me some options.

Here are a couple photos it was quick and easy. Figureing out what I really want then will change it. I just ordered track to do a floor similar to yours
