We are building out a van for the Pan-American right now. We will be purchasing a Partner Steel propane stove and will be designing a way to secure it to the kitchen area in our van. Depending on how involved you want to get, you could build something similar to the inside/outside stoves that were in the 90's pop-up campers. We keep considering this as it would be nice to unlock it from the inside counter then connect it to the van body outside under an awning. It was extremely convenient and the propane system had a quick disconnect in both locations. Ours was inset in a mini counter top which is what was attached and detached. A blank piece of counter top would then be placed inside to make one continuous work space in lieu of the stove.
We were once considering a single fuel, diesel, set-up but from reading recent trips there are several new resources for locating propane. A cat can stove would make a great back-up and be useful if you decide to do some backpacking.
We have about 7 months before our drop dead get out of dodge launch date and we still have to install the walls etc. before we get to the kitchen. Have fun and maybe we'll meet on the road.
