Clean slate. New build.

I just gutted an old Coachman class B motorhome. It was 27 years old and the foam and carpet were really bad. I have a clean slate and a small hard top. Thinking of installing an elevated pull out bed over the back to create a "garage" Then having the front just like a RB50. The van has sprayed on foam either from the factory or Coachman. I was wondering if anyone has ever sprayed foam over this for additional insulation? I have access to the foam?
