How do the Morimoto 2Stroke 2.0 9007 LED (plug and play) work? I would get the housings from you too. Is the beam acceptable or does it scatter and blind oncoming traffic? Definitely looking for an upgrade, but not sure if I'm ready to shell out for the projectors.

Short answer is they don't work well since the reflectors in the housings aren't optimized for the focal point of the LED bulbs. You will have increased output at the expense of anyone in front of you. The projector upgrade solves this issue with a precisely controlled output and DOT approved cutoff to eliminate glare to oncoming traffic. If you go this route buy cheap versions elsewhere and save for the projectors. The Morimoto bulbs are great quality but not good in the 9007 based housings.
