Having read this thread and then looking into my coverage with Geico, I realized I was covered for an '07 GMC Savana cargo van. I called my friendly Geico agent and told him what I really had. As Sportsmobile is a legit RV manufacturer I was able to get covered as an RV for less than as a van given the lower mileage. They're actually going to send me money back! I know it's not much help for the DIY van builder but I'm glad I looked into it.

I've looked into this and found a few caveats that may come to haunt someone as an adjuster looks at a wreck. RV insurance will be the bomb as you can name replacement value, and Progressive seems to be by far the best.... however from my talking to agents, if you do not have 1)fresh water storage 2) a permanently installed stove, and 3) a toilet, it is not an RV in the eyes of the insurance company and you will likely have a hard fight getting replacement value.

That's just from my dealings in trying to insure my conversion that USAA considers to be worth maybe $7k when it's easily worth $35 k on the open market

That's what I found too -- without a permanently plumbed toilet, RV insurers wouldn't talk to me.

Allstate insurance summary

Received my updated insurance policy. It would not cover all the upgrades added, but if Van was totaled it would more than pay off my loan amount. My Van is a 2013 EB350, V10 (2014 SMB conversion) with 45K miles that I purchased last year for $62K.
