Since you are using Vinyl tubing you don't need a PEX barb. A standard 7/16" ID tube barb will work. (Assuming that is the size tube you have)
So something like this should work.

Or put 3/8 compression valve at the PEX and use 3/8" line to extend to the sink sprayer hose this will require a 3/8 comp to 1/4" coupling.

You will also need a 3/8 supply hose used on dishwashers. Or make one with 3/8" tubing and ferrules.

What I ended up doing was cutting the end off the sink sprayer hose and using a Pex 1/2" to 3/8" fitting to connect the sprayer hose to the vinyl line. Seemed to work ok. I didn't have time to test the water system today but hope to tomorrow. A bit nervous as I've never tried the water system in this van since I bought it five years ago, but it all looks intact.

There must be a solution. Probably require 3 pieces. Pex barb to Male NPT, Female NPT/NPT, Male NPT to 1/4" Barb.

Sounds simple enough, I tend to over think things like this!
