From Spokane you could easily head to Winthrop and head west through the north cascades hwy and North Cascades NP. That's a spectacular drive. Once you connect back up with I5, you could make your way over to Port Angeles and drive 101 south through Olympic NP.

OK, decision made - I know it's touristy, but I love Yellowstone and the Tetons, so that's where I'm going.

It will still be more of a drive-through than sit-and-stay, but I'm not passing up the chance to be in those mountains again. Last time I was there was 2011, when we packed three humans and all of our camping gear into my little Prius for a three week trip. No rooftop carrier, either.

North of Las Vegas and south of St. George on I-15 is a very nice campground within sight of the freeway called the Virgin River Canyon Campground. It is in the tiny corner that I-15 crosses through Arizona. We have stayed there twice coming and going on I-15 toward other adventures.

The Virgin River Gorge is one of my favorite places. Work takes me to St. George a couple of times a year, so I've driven through a lot, but never stayed.

My best advice would be to not overplan the trip. The best parts of our trips have always been things we happened across, not things we planned to see. And if we wind up spending the whole week in one place it just meant we had to come back to see the other sites.
