I think it's a good idea to put a continuous layer of a thick protective sort on interior surfaces for the purposes of insulation, surface and seam sealing, and sound control. I plan to use DIY...

no to spray foam for me because:
1. it doesn't adhere to the steel it just fills gaps so with age, vibration, hot, cold, etc it can become loose in the cavity and make noise. squeak, thud,...

Totally agree but in this case I'm not dismissing the idea of cotton insulation on foil quickly. I've touched it, smelled it, even used it before. I know it's properties and if it was what I wanted...

Another absolute vapor barrier (aluminum foil again) with an absorbent insulator(natural cotton fibers) on it's back side. VERY similar product to the soft-touch denim/foil stuff. NOT what I'm after...

Yeah I've seen it. That looks to me like aluminum foil, an absolute (completely impermeable) vapor barrier, with a highly absorbent insulator (denim? think wet blue jeans) on one side.
