17s are easier to find E in certain sizes, and they clear brake upgrades (not current on what is available, esp Quigley)

16s leave more rubber like you said.

7, 8 and 9" are referring to rim width. The way the tire number breaks down:

285/75/17 E

285 = tire width in mm (11.22")
75 = percentage of width which is sidewall height (rim to tread)...

Your local tire shop of choice can't get Mojave's? Of course they're not silver so that might not be an issue anyway. You can get mounted balanced tires and rims online, but I only used that for...
