I just re-read your post, and realized you have an EB-50 layout. The reason there is no seatbelt on the driver side is due to the cabinets. You would have to remove or trim down the cabinet in order...

Ford builds the seatbelt anchors into the body. Check out a stock passenger or cargo van so you can see where those anchors are.
