Are the coffee pot and heater electrically heated? Or propane? Heating anything with electricity takes substantial power.

Our van has a 12V Norcold fridge, propane furnace, lights and in cold...

Mounted on top of the roof racks is not a bad idea. It is good to have some air under the panel to allow for cooling.

I ran my solar wiring down the rear corner opposite the factory PH wiring....

Why can't a solar panel hang over the sides of the top? No reason it has to be narrower than the space under it.
