I think calling that a camper conversion is a little optimistic, but I do see potential.

Steel box ambis are HEAVY HEAVY HEAVY. I'd go for a van body ambulance over this any day.

And they flex and crack bad even in road use. There are a few very well made (but still heavy) all aluminum ambulances out there. A Braun or Horton "mini-mod" would be a good choice if looking that route.
