I elected to go with the HeatMate 5200 for infrequent heating and cooking needs:
I think I may be changing the design of the kitchen unit to something even simpler that could be used both inside the van (while kneeling or sitting) and outside the van (standing outside at the side doors). My van has the dual side cargo doors and this unit will block one side anyway, so might as well make it accessible from 2 sides. It would probably resemble something closer to a camp kitchen than a campervan kitchen unit. The stove would sit on one side (hinged lid on top)with a Yeti cooler on the other with the tops even to have a work surface:
I have a sketch of my idea that I will scan in and post. I'm mostly thinking out loud at this point!
