Not sure why you say laminate is thick and heavy. The stuff I used, Wilsonart, is about 1/16" thick. It's glued onto 3/4" birch plywood and then has a rubber edge band. I think it is probably the best ratio of cost to utility. Maybe you're thinking of a pre-made laminate countertop, which is made with chip board?
