Pleasure-Ways seem to have one if the nicer interior build qualities in the campervan world.

Pleasure-Way Traverse vans also have low profile tops. Both these and GTRV have the SMB "50"/Westfalia-style layout.

You should look at GTRVs, too. Their roofs are very low profile (can barely tell it's a pop-up unless you know what you are looking at). They are fairly hard to find used, though.
