I also have a 20 gallon tank. Fresh water is the hardest thing to find in a cross-country trip and the single item that limits your stay in the back country. However, my 2500 is commonly near (or over) it's GVWR when I leave for an extended trip.
So I purchased 3 collapsible 5 gallon water carriers to use only when needed. Normally they are empty.
I also added an internal water fill near the galley so I can use a siphon hose to fill the 20 gallon tank.
This worked well traveling across Canada where the water quality is questionable at campgrounds and in Canyonlands where water sources are few and far between.
