To answer your question, never feel the high top was a center of gravity issue. It have sometimes been an issue on forest road as height could be too high to drive under some tree branches.
But high top gives extra confort by cold weather as it makes the interior easier to keep warm. And I like beeing able to stand up inside.
Hope it helps even you likely already choosed an option between cutaway or high top.
