Finally found one of the threads I was thinking of. SMB-er took a set of those long fiberglass running board/flare combos (such as is on your van) and made them into "poor man's bushwackers." ...

I totally agree with trying things for awhile as-is. You never know.

Nice rig! I've always thought that would be a great location for the fridge, as it could be accessed from outside or inside (too bad they don't make some fancy door that opens both ways though).
