@Radmobile, you've gotten some great advice already but other than campgrounds I would recommend this. There is a giant parking lot at the visitor's center, where you'll want to go and learn and jump on a bus to ride up the canyon, which you have to do anyway as it's closed to cars.

On any weekend or summer day the parking lot is going to have 'full' signs out by 0900 at the latest. Drive right on by them. No one is watching. The parking lot has people constantly coming and going. We've always sought shelter, tailgated and picnicked right at our van in the parking lot. Many others do too.

Zion is hot. Be ready. If you're taking a trip of any length you'll likely want to see some of the other greats of the area. Bryce of course, North rim of the GC, etc. etc.

Whatever the Virgin runs through. Not really a canyon. But it's on the north side, opposite Gooseberry.

Also above Lava CG you can find camp sites along the shore at Kolob Lake. When I was through there last it was November and Lava was closed for the season. Might be busy around there in a month.

Dalton Wash Road just east of Virgin offers several places to boondock. If entering at night, you might think the road is questionable, but it never gets bad. My van is 2wd.

If you're old like me, there is a small RV campground at the other end of the main road through the park when you exit it at a "T" intersection to another main drag. Nothing to look at but it does have full hookups if you need it. We tow a travel trailer and this spot is also convenient to Bryce Canyon.
