Looks like we'll be going with a slightly modified EB-51 as that seems like it would work for us. It's not my favorite layout but it does provide a good amount of room and everyone is facing forward. I would like to fit a larger fridge (possibly an Isotherm) and two cabinets in the rear space for extra storage.
Thanks to everyone for their input, it was all quite helpful. I am sure I'll have more questions as we get deeper into this design. This is a terrific forum as there is no other way to get this much useful information about SMB anywhere else. Thanks again.
