I have a 2013 Roadtrek Adventurous on a (2012 3500 chassis). It is NOT an EB. I believe the EB is rated to tow 5000 lbs and mine is rated to tow 7500 lbs. However my conversion weighs in around 8650 lbs full gear, fuel and propane... no people or water. With the max combined weight (GVWR) allowable being 15250, that's leaves me around 6600 to work with. Add up 25 gals of fresh water (around 175 lbs and me wife and three young boys (around 425)... now we're at 6000.
Recently I hauled my Livinlite VRV 7x20 toy hauler/trailer with three dual sports (KTM 350, Husky 650 and Yamaha WR250R). The trailer weighed in at barely under 4000 lbs. The bikes around 800 lbs and around 500 lbs of gear. So 5300 lbs total. Bringing me to around 14550 grand total. So just 700 lbs below GVWR.
I know that was a lot of info, but short story long, I'm almost maxed out (if I weighed and calculated everything right).
The Sprinter did very good. Only short coming was hills. From Pittsburgh to Tellico Plains TN there are a fair amount of hills (no mountains, just hills). And no altitude to deal with either. I'd manually use the shifter to keep RPMs around 2200 (read that somewhere). I'd like to get one of those plug in computers to tell me all the info better though. Anyway we'd slow to around 50 mph on the climbs. I tried to keep the accelerator back to save fuel economy. We got around 14 mpg. On the flats we did very well. The Sprinter tracks well and is a joy to tow with. Just weigh it all, know your numbers, and throttle back a bit.
