A good rule of thumb for brakes is that the pad material should not get much thinner than the metal backing plate. The rotor minimum thickness is stamped on the radial face of the rotor. I'm not sure what it is on an e250 but on my rig it's a minimum of 1.122" thick.
I'm still on the original rotors and pads at 78,000 miles and on my 2nd set of OME shocks.
