Depends on the temp (beer, not model), but 10 PSI might work fine. I'm running 9.5 on some california common and irish red right now. You have to consider both the carbonation level, and the amount needed to push through a given tube. But 10 PSI for a five gallon keg at say 38F with 5' of 5/16" tubing is a pretty normal starting point for kegging a pale ale. You might be running warmer, so you'd need a HIGHER PSI to get the desired carbonation level, in which case you'd need a longer tube. Just in case you need to try it we're here to help

I'm a beer consumer not producer, so I don't know the tech details. But I'm thinking the flow rate at 10PSI is aggressive enough that it wouldn't all reliably get into the mug, and I'd hate to witness the tragedy of good beer wasted. And expecting the consumer to exercise judicious handling of the spray nozzle might work on the first mug; but by the third gallon or so that part of the apparatus might not work so well.

The flow rate is tempered by the size and length of the hose. It's rather an art to get the proper sizing so that you get beer with some foam, not foam with some beer. In contrast, if you just wanted to do carbonated water you'd go up to about 30 PSI and use about 15' of 5/16" hose at 38F. There are calculators online to get you started.
And the temp of the hose makes a diff; that's why sometimes a warm hose hanging outside of a keg above the ice makes beer foam more. Like opening a hot soda. As soon as it warms it forces CO2 out.
And not to belabor it, but the design you came up with here could essentially be replicated using all beer equipment. In place of the long aluminum tube for water you'd use a 5 gallon stainless cornelius keg painted black, and a few fittings would change, but it's very doable. And food grade, so suitable for drinking. Could use air, CO2, or whatever. Or a beer shower...like the old college days.

I love what you put together! Great stuff! Questions for you:
With the portable air tank filled, how long does it take to empty the water tank? (Trying to calculate how many quick showers one could potentially get)
I also assume that with your new setup, you run out of water long before you run out of air in your tank right?
