Anzac: It's all simple. The issue is in my custom setup it's a pain to get to the valve and also to see the tank.

Ok, you don't need to see the tank because it has an overflow that drains under the van. Or at least it does on my van.
If you can't get to the valve, just install a new one somewhere convenient, it just connects the pressure side of the lines to the tank pickup. You should be able to do it and leave the existing one intact if you want. There is a diagram of the stock setup in the manuals I think.

Unfortunately, you need to turn the factory valve. If left closed, you can't fill the tank. If left open you can't pump water to the sink.
Dick, maybe you could come up with a remote for the valve. I'm picturing a small sprocket where the handle is, a chain drive to another sprocket/handle that is accessible.

I disagree - or at least on my van's plumbing. You could leave it closed, and it is like it isn't there.
You could add another valve which provides the same bypass functionality when open, taking from the pressure side of the pump (which is directly connected to the city water inlet) and the other side to the tank, the exact same way the other one is connected.
You're basically just putting two valves in parallel -- when they are both closed, the system can pump, when either one is open, it will fill the tank.

I'm sorry, maybe I'm misunderstanding what you are saying. You can leave the valve closed and still fill your tank? Or you can leave it open and still pump to the faucet?
Of course, you can leave the valve closed and city water pressure will go to the faucet, but that really doesn't solve Dick's problem, does it?

The existing valve connects the high pressure side to the tank. You could leave it closed and it will have no function. You can connect a NEW valve via two pieces of tubing across where the existing valve connects, in parallel not series.
This way either old or new valve, when open, will fill the tank.

Didn't read everybody's responses, but my tank has an overflow/breather tube that vents out the bottom:
Meaning I just turn the city water on and wait for it to come out the overflow onto the ground, shut city flow off, then shut fill valve inside. Takes a few minutes to clear the overflow tube but it's much better than watching the tank.
