These containers are fairly sturdy, but the rigid plastic can shatter if abused. Being cylindrical, they waste a bit of space compared to a box-shaped container. Finally, the water fountain bottles aren't designed to be closed again once opened, so you'd have to find some kind of stopper. These fountain bottles are usually purchased full and returned empty for a $ deposit return. That's how we get our freshwater replaced when in Mexico -- at a water store, we buy a fountain container, pour its contents in our Sportsmobile's water tank, return it for a refill (and repeat until we're full), and finally return the empty bottle to get our deposit back.
What we use instead for extra water is a rectangular 5-gallon polyethylene container like this Coleman one below. The plastic is softer, and will rebound on impact (instead of shattering):
We've also tried collapsible 5-gallon containers like this one, but they don't close securely -- so leaking is a problem:
