Sounds like the Jackery is working for you. In the last week or so I have pretty much decided to not do a full Smart Relay/Battery/Wiring and just grab a contained Jackery style setup. We are weekenders as well, and a Jackery with just a couple items fused off the 12V outlet would be everything we would need. A Maxxair fan might be the only hardwired item in our build depending on our lighting decisions.

Love ours. My next mod I need to do is add a 12v outlet in the back that turns off with the ignition. That way I can always keep it charged up and not forget to unplug it. I was impressed with how how much it charged up while driving.

Finally got out and put this thing to use. Really happy with the setup. This jackery 1000 battery is a little champ. Ran the fridge for 89 hours and charged two phones once. We left with 36% still left on it.
So happy to hear that about the Jackery Explorer 1000, I just pulled the trigger on it this morning.

Some updates to the rig. Added some agency 6 grab handles for bling. Finally used the ditch light brackets I bought from vantage. I also got a molle panel from builtrightindustries for one of the barn doors to test out. Its working for me so far.
